Amaranth Leaves
Resembling spinach in appearance, Amaranth Leaves come in a few varieties ranging from red and purple to green or gold in colour and are found in the foothills of the Himalayas to the coasts of South India. Used mostly as part of the winter dishes of saag, it is the less favourite relative of spinach. But Amaranth leaves are much superior to most greens because they are a powerhouse of nutrients.
Usage
Amaranth leaves are much loved in Indian homes and take the form of stir fry, soup, dal, curries and stew in our daily meals. Fresh, tender leaves and shoots of Amaranth can be eaten raw in salads or as juice.

Storage
Store the Amaranth Leaves in the vegetable bin of your refrigerator. It should last up to a week and perhaps even longer.
